Padrón is a small pueblo found in Galicia, Spain. We first fell in love with Pimientos de Padrón while living in Santiago de Compostela, in the northwest of Spain.
Pimientos de Padron are bite sized green peppers that need nothing except a bit of oil to
cook them and a finish of salt to enhance their already yummy flavor. Typically served in
Spain as a tapa, usually with a basket of bread and glass of wine, they make it easy to fall
in love with Spanish food. With fresh ingredients and a simple preparation, it is hard to
go wrong.
These peppers offer a unique flavor and experience. You can eat a dozen very mild peppers only to find that the next one is hot and spicy. Some call it Spanish roulette!
